Napa Nate’s Smoked Turkey
Brine
About ½ gallon water
½ cup salt
½ cup brown sugar
Peels from 1 whole orange
Peels from 1 whole lemon
3–4 fresh bay leaves
Several sprigs fresh thyme
Several sprigs fresh rosemary
3 garlic cloves
⅛ cup whole black peppercorns

Bring the water to a boil and add the salt, brown sugar, orange and lemon peels, bay leaves, thyme, rosemary, garlic, and peppercorns. Stir until the salt and sugar are completely dissolved.

Place your fully thawed turkey in a large food-safe container. Pour the cooled brine over the turkey and add enough cold water to completely cover it. Place something food-safe on top to keep the turkey submerged.

Refrigerating overnight works great!

Garlic Herb Butter
2 sticks butter, softened
5–6 garlic cloves, finely chopped or mashed
2 sprigs fresh thyme, leaves removed and chopped
2 sprigs fresh rosemary, leaves removed and chopped

Mix everything together with a fork.

Remove the turkey from the brine, discard the brine, and pat the turkey very dry. Gently loosen the skin over the breasts and thighs. Work the garlic herb butter underneath the skin and rub it directly onto the meat.

Coat the outside of the turkey with a nice layer of olive oil and season with salt and black pepper. Go easy on the salt because the turkey has already been brined.

Stuff the Cavity

Add a few sprigs of rosemary and thyme, several garlic cloves, ½ orange, and ½ lemon to the cavity. If you have any herb butter left, throw that in there too.

Tie the legs together to help hold everything in place.

Fire up your Weber or smoker and bring it to 325°F.

Place the turkey in a roasting pan and add:
About ½ gallon chicken broth
Carrots
Celery
Remaining ½ orange
Remaining ½ lemon
Fresh rosemary
Fresh thyme

Strain all that incredible broth and turkey juice from the roasting pan. Skim off excess fat and use the liquid to make a homemade turkey gravy.

Crawfish Étouffée — Bringing the South Up North
Ingredients
2 sticks salted butter
2 yellow onions, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 tbsp Pi-YAHHHHH! Seasoning
¼ tsp salt
¼ tsp cayenne pepper
4 garlic cloves, chopped
⅓ cup flour
2 cups hot water
2 lbs Louisiana crawfish tails
Cooked white rice or wild rice, for serving
Garlic bread, for serving
Instructions

Melt the butter in a large pot over medium heat. Add the onions, celery, bell peppers, Pi-YAHHHHH! seasoning, salt, cayenne, and garlic.

Cook the vegetables slowly for 30–40 minutes, stirring occasionally, until they soften and are just starting to brown.

Stir in the flour and cook for a few minutes. Slowly add the hot water while stirring until the mixture becomes smooth, rich, and creamy.

Add the crawfish tails, stir everything together, cover, and simmer on low for 15–20 minutes.

Serve hot over a bed of rice with garlic bread on the side.

Napa Nate Tip

Want to bring the South to the North? Serve this Cajun classic over Minnesota wild rice instead of regular white rice.

This is a great recipe passed along to me by one of my good Cajun friends—and it’s the kind of meal that’ll have everybody going back for seconds. Enjoy!

The BEST Shore Lunch Fries Ever!

Ingredients

Fresh russet potatoes
Shore Lunch Batter Shake
About 3 lbs. of lard
Salt & Pepper to taste

Instructions

Prep the potatoes: Leave the skins on and slice the russet potatoes lengthwise into ¼–½-inch-thick fries.
Shake ’em up: Put the sliced potatoes in a zip-top bag with Shore Lunch Batter Shake. Give them a good shake until evenly coated.
Build your shore fire: Find a few sturdy rocks along the shoreline and arrange them to make a level, stable base for your 12-inch cast-iron pan. Build a wood or charcoal fire underneath and let it burn down to a good bed of hot coals.
Heat the lard: Add about 3 lbs. of lard to the cast-iron pan. Using a thermometer, heat it to around 375°F. Keep the pan level and secure—the lard will be extremely hot.
Fry ’em up: Carefully add the potatoes in batches. Cook until they float to the top and are crispy, golden brown.
Season & enjoy: Pull them out, let them drain, and hit them with salt and pepper. Pass them around, collect the high fives, and enjoy!

Leave No Trace: Always have a bucket of water nearby. When you're finished cooking, completely extinguish the fire and make sure the coals are cold before leaving. Take care of our shorelines so we can keep enjoying shore lunches for generations to come.

Fresh fish, crispy fries, and a fire on the shoreline—it doesn’t get much better than that!
