The hosted the Lever Forever event on Sunday 4/26, showcasing a variety of Lever Espresso machines that were initially designed in 1901 and became a popular style of machine in the 1940’s. Today they continue to be built with a spring loaded lever to force hot water through finely ground coffee. Previously the pressure of this lever would snap back up and could possibly hurt the barista. While there’s been many electronic and technological advances in machines, a lever pull system has a hands on process that creates a golden foam, called the crema. Enthusiasts love the craftsmanship and new safety features that has been perfected over a century and La Marzocco along with a couple of other brands like Lapera, are still manufacturing these unique espresso machines.
