Outside of her career in real estate, Amy is a Long Island Native who raised her family here on Long Island. Her husband is also in the real estate industry. She is a mother to 3 grown children, and grandmother to 7. Her 3 granddaughters and 4 grandsons are her true joy! Did someone say popsicles for breakfast? Yes, please!

Ingredients:
• 1 lb. ripe peaches (about 3 large fresh peaches), peeled, pitted, and cut into ½-in. chunks
• 1¼ c. whole milk plain Greek yogurt
• 2 tbsp. honey
• ½ tsp. pure vanilla extract
• 1 tbsp. chia seeds (optional)

Instructions:
1. Place the peaches, honey, and ¼ cup water in a small saucepan. Bring to a simmer over medium-high heat. Cook, stirring occasionally, until tender and syrupy, about 5 minutes. Transfer to a medium bowl, stir in the vanilla, and let cool completely.
2. Stir the yogurt and chia seeds, if using, into the cooked peaches until combined. Divide among seven 3-ounce ice pop molds. Add sticks and freeze until firm, at least 4 hours.
3. To serve, loosen the pops from the molds by dipping the molds in a bowl of warm water
for 15 to 30 seconds.
