The first time you sell tickets to a night at your place, you run into a permit gap nobody warned you about. If you make beer, wine, or spirits, the fining and processing agents you use to clarify a batch can carry a food allergen. Egg whites count as eggs, isinglass counts as fish, casein counts as milk. Most of it comes out before the bottle is filled, but it still came from somewhere, and it catches plenty of careful producers.

Right now, listing allergens is voluntary. What catches people is this: choose to list one allergen and the rules say you list all of them, including the ones from your fining and processing agents. Federal regulators have proposed making disclosure mandatory down the road, with a long runway, which makes right now the easy time to map what’s actually in your process.

H**p drinks moved under the TABC on July 1, the same agency that already handles your liquor license. The gray area that kept venues away is the part that just got fixed.

Two things if they’re already on your menu: the old Department of Agriculture license stopped working June 30, so you need the TABC h**p retail license to keep selling, and you can only source from a TABC-licensed wholesaler now. The everyday question. The text from the GM at 9 o'clock about whether they handled a refusal-of-service the right way. The forward of an email that's making someone nervous. The five-minute call before signing a new vendor.

These are the questions operators tend to swallow when they're billing by the hour. Each one feels too small to spend the money on. Six months in, the swallowed questions have stacked into something bigger.
