Here are my favorite photos from day one. I LOVED walking with my family and our pooches joining us at the finish line. 🩷🦩🩷

I was thrilled to see my friends that I made during my 1st Pledge the Pink walk in 2023!

No shortcuts and it was hot. The volunteers rallied around me at the end. They are a blessing to all the survivors and the walkers!

Tasty Tuesday: Celebrate National Pork Month with Garlic Pork Bites

October is National Pork Month, and what better way to celebrate than with a flavorful pork recipe that is easy enough for a weeknight dinner but delicious enough to serve to family and friends?

For this week’s Tasty Tuesday, we’re featuring Garlic Pork Bites from I Am Homesteader. Tender pieces of pork are seasoned and seared until golden, then tossed in a rich, creamy garlic-Parmesan sauce. It’s a comforting meal that comes together in one skillet and is packed with flavor.

Garlic Pork Bites
Ingredients
Pork

4 boneless pork chops (approximately 2 pounds), cut into 1-inch pieces
1 teaspoon onion powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 tablespoon extra virgin olive oil
Sauce

¼ cup (½ stick) unsalted butter
1 teaspoon garlic, minced
1 tablespoon all-purpose flour
½ cup chicken broth
½ cup heavy cream
½ cup grated Parmesan cheese
2 tablespoons lemon juice
Salt and pepper, to taste
Instructions
Season the pork evenly with onion powder, salt, and pepper.

In a large 12-inch skillet, heat the olive oil over medium heat. Once the oil is hot, add the pork and sear for 3–5 minutes on all sides, cooking for approximately 13–15 minutes total. The pork is fully cooked when it reaches an internal temperature of 145°F.

Remove the pork from the skillet, place it on a plate, and tent it to keep it warm.

Using the same skillet, melt the butter. Add the minced garlic and cook for about 1 minute. Whisk in the flour and cook until the mixture is slightly thickened.

Add the chicken broth, heavy cream, Parmesan cheese, lemon juice, salt, and pepper. Allow the sauce to simmer for 5–8 minutes, or until it has thickened.

Return the pork bites to the skillet and toss them in the creamy garlic sauce until they are completely coated. Serve immediately.

A Delicious Way to Celebrate National Pork Month
These Garlic Pork Bites are proof that you don’t need a complicated recipe to put a flavorful dinner on the table. The combination of tender pork, garlic, Parmesan, cream, and a touch of lemon creates a rich sauce that makes every bite delicious.

Serve them alongside mashed potatoes, rice, pasta, roasted vegetables, or a fresh green salad for a complete meal.

A special thank you to I Am Homesteader for sharing this delicious Garlic Pork Bites recipe.
