I spent four days last week studying gas chromatography at Axion Labs in Chicago. This is how they test your blood in DUI cases. It is accurate if it is done correctly, but it is quite complicated and there are a lot of ways the result can be rendered unreliable.

Do not do field sobriety tests. You don’t have to comply with them. Most people can’t do them sober and they ruin a lot of otherwise winnable DUI cases.
