When he officially stepped into Le Dalat 14 years ago, he wasn’t just taking on a business. He was taking on the responsibility of protecting his grandmother's deep love for Vietnam and its splendid cuisine.
Here is what it actually takes to keep a nearly 50-year-old legacy alive:
1. The Hard Lesson: Early on, Micky believed that protecting Le Dalat’s quality meant he had to supervise every single detail himself. But as the restaurant expanded, he learned that true consistency doesn't come from micromanaging. It comes from trusting your people, training them well, and letting them take ownership.
2.The Uncompromising Standard: While we have embraced new technology behind the scenes, the soul of the food remains untouched. We still import our essential ingredients directly from Vietnam to guarantee total authenticity.
3. The Ultimate Goal: The team is united by one shared dream: to ensure Le Dalat remains an incomparable dining experience, driven by warm, personal service.
